About me:

Ever since I was a little kid I’ve been a very active person. If I wasn’t playing baseball, tossing around a football with my brother, running cross country and track, and joining CrossFit I found myself doing something to get the blood pumping. Although I can’t say much about eating healthy. I seemed to have lost my way as I entered college. I found myself eating like garbage and drinking tons of beer which led to the beginning of my weight gain. This trend continued into my first job out of college. It wasn’t until I looked at myself in the mirror several years later that I realized that this had to stop. After being derailed by all of my bad eating and drinking habits as well as a lack of motivation to exercise, I wanted to take back my life. So I started cleaner eating, measuring out the right food proportions and training for months for my first marathon. I felt like my body was, in a way, thanking me for doing something. When I crossed the finish line of my first marathon I thought “Why stop there? Why not continue my path to a building a better version of myself?” From that moment on I felt like I was headed in the right direction, not looking in the rearview mirror. I’ve been eating a plant-based diet since 2016 and have continued to live an active lifestyle. I feel like now I’m in the best shape of my life.

What do I eat:

Most people think plant-based diets include eating salads or some type of bird seed. Don’t get me wrong I love eating salads, but there’s more to it than that. Within all of the recipes I include you may think to yourself “That’s plant-based?” It’s surprising what actually can be made without any dairy, eggs, or meat. It’s all about choosing the right ingredients and spices that add flavor and depth. Healthy eating should be easy and not require you to travel to the edge of the world for rare spices that you’ll only use once. Take a look at some recipes that keep me going.

How do I stay active:

I’ve always been passionate about running as it’s been the backbone of my physical fitness for over 20 years. I’ve expanded my love of running and became a certified running coach. I’ve always wanted to share my love of the sport and thought that this would be the best way to do just that. While running is my first “love” I’ve grown to enjoy other exercising as well, like strength training and Crossfit. These forms of metabolic conditioning and strength training have made me more of a well-rounded athlete. There are a vast array of body movements and weight lifting techniques each with their own intensity. Both have enabled me to become stronger in areas that I never thought possible. It has become a major part of my life as I now train around 5 - 6 days a week either running, lifting or cross training. My rest days usually are made up of either walking my dog, hiking, biking or some type of yard work or gardening. If I’m not moving around, then I’m probably sleeping or sick.

My Goal:

When I started Cor-Cor the Herbivore, my goal was to inspire clients to take back their lives and set them on the right path to living happier and healthier. Eating healthy and being more active are two of the most important things you can do for your body. While nutrition is about how you feed your body the right things, being more active allows your body to move and function properly, perhaps releasing some of that built up stress. Cor-Cor the Herbivore will help give you the tools you need to nourish your body inside and out as well as keep your body moving. With being both a certified holistic nutritionist and running coach, I am able to help you achieve your goals and truly help you eat well, move more, and stress less.
